Gluten Free Blueberry Ricotta Pancakes

Breakfast vibes this morning:

  • Paleo pancake mix by Birch Benders (available at most grocery stores and usually Costco!)

  • Vanilla collagen (optional, but I think it is nice to mix protein with carbs)

  • Fresh blueberries

  • Dash of cinnamon

  • Kerrygold butter

  • Ricotta cheese

  • Maple syrup

Mix the pancake mix, collagen and blueberries together to the desired consistency. Add a dash of cinnamon to the mix.

Cook in butter over medium heat. Truly, using high-quality butter makes a great difference in taste. Kerrygold is my favorite.

When the pancakes are mostly done, spread ricotta cheese over the top and let it heat.

Serve with warm maple syrup.

Easy, healthy, delicious!  

*Pro tip: Read the ingredients on your syrup and ricotta cheese of choice. Choose ones with ingredients you understand. If they contain lots of additives, the meal’s healthiness level decreases.
